Why spend $7 on a starbucks ube coconut macchiato when you can whip one up right in your kitchen? This drink has all the creamy layers, sweet coconut, and that subtle earthy ube flavor you love, without the coffee shop price tag.

Ingredients for Iced Ube Coconut Macchiato

Oat milk


This is the creamy base. It’s smooth, froths beautifully, and doesn’t overpower the flavors of coconut and ube.

Toasted coconut syrup


Sweet, nutty, and just a little tropical. If you haven’t made it yet, check out my toasted coconut syrup recipe, it’s super easy and tastes way better than store bought.

Ice


Keeps the latte perfectly chilled and helps those gorgeous layers form.

Espresso


Two shots give it that rich coffee flavor without being too strong. If espresso’s not your thing, strong brewed coffee works too.

How to Make Your Iced Ube Coconut Macchiato

1. Mix the milk layer
Pour 1 cup oat milk into your glass and stir in 1–2 tablespoons of toasted coconut syrup. Add 1 ½ cups ice and give it a gentle stir so everything chills evenly.

2. Brew the espresso
Pull 2 shots (about 2 oz) and slowly pour it over your milk and ice. That’s what gives it that classic layered look.

3. Make the ube cold foam
Whip together 3 tablespoons vegan heavy cream with ¼ teaspoon ube extract and 1 tablespoon toasted coconut syrup until it’s light and frothy. My favorite way to make cold foam is with the ninja milk frother. 

4. Top your drink
Spoon the ube foam on top of your espresso layer, and if you want to go all out, sprinkle a pinch of toasted coconut flakes.

5. Enjoy!
Sip slowly and watch the layers mix together, creamy oat milk, sweet coconut, earthy ube, and rich espresso all in one glass. It tastes fancy, but it’s totally doable at home.

  • Milk Layer
  • Pour oat milk into a glass and stir in 1–2 tbsp toasted coconut syrup. Add ice and stir gently.
  • Espresso Layer
  • Brew 2 shots of espresso and slowly pour over the milk and ice.

  • Whip together vegan heavy cream, ube extract, and 1 tbsp toasted coconut syrup until fluffy.
  • Spoon/Pour the ube foam on top of your latte. Sprinkle toasted coconut flakes if you like.
