Vegan Pancake Donuts
If you’ve got pancake mix in your kitchen, you’re already halfway to making these. These vegan pancake donuts are soft, fluffy, and baked in a donut pan with whatever mix-ins you’re feeling. I also love keeping a batch in the freezer for busy mornings or quick school day breakfasts.
How to make pancake donuts
I love how simple these are. You’re basically just turning pancake mix into donuts and baking them instead of making pancakes on the stove.
1.Prepare pancake batter according to package directions using water or plant-based milk.
2. Spoon or pipe batter into a greased donut pan.
3. Add your mix-ins on top of each donut and lightly press them into the batter.
4. Bake until set and lightly golden.
That’s it.
Tips for making pancake donuts
A few small things make these even better.
Make the batter slightly thicker: This helps it hold its shape in the donut pan.
Use a piping bag or zip-top bag: Makes filling the pan easier and cleaner.
Don’t overfill: About 3/4 full is perfect so they bake evenly.
Press mix-ins in lightly: This helps them stick while baking instead of falling off after.
Check early: Pancake mixes can vary, so start checking around 10 minutes.

How to store pancake donuts
Store in an airtight container at room temperature for up to 2 days or in the fridge for up to 4 days. Warm slightly before serving if you want them soft again.
To freeze, let them cool completely first, then store in a freezer-safe bag for up to 1 month. Reheat in the microwave or let thaw overnight.
