Ingredients You Need

You don’t need anything fancy for this recipe, which is part of why I love it.

You’ll need one block of firm tofu, one full carton of JUST Egg, a tablespoon of vegan butter, half a teaspoon of turmeric, and a couple tablespoons of unsweetened almond milk.

That’s it.

How to Make Vegan Scrambled Eggs

Start by adding the vegan butter to a pan over medium heat and letting it melt. While that’s heating up, take your block of tofu and gently squeeze out any excess liquid. You don’t need to press it perfectly dry, just get most of the moisture out.

Crumble the tofu with a fork and add it directly to the pan. Sprinkle the turmeric over the tofu and give it a quick stir so everything is evenly coated. Let the tofu cook for about four to five minutes, stirring occasionally. This helps it warm through and take on a bit of color.

Next, pour the entire carton of JUST Egg into the pan with the tofu. Add the almond milk and gently stir everything together. Let it cook, stirring occasionally, until the JUST Egg sets and starts to resemble scrambled eggs.

Once it looks fluffy and cooked through, you’re done. That’s it.
