Simple Vegan Blueberry Muffins
These vegan blueberry muffins are soft, fluffy, and loaded with juicy blueberries in every bite. They’ve got tender centers, lightly golden tops, and that just-sweet-enough flavor that makes you want to grab “just one more” on the way past the counter.
They come together with simple ingredients and one mixing bowl, and the batter is very forgiving, which I always appreciate on busy days. If your kitchen smells like warm vanilla and blueberries while these bake, you’re doing it exactly right.
Why you’ll love this recipe
Soft, fluffy bakery-style texture
Packed with fresh blueberries
Simple method, no mixer, no stress
Dairy-free and egg-free
Easy to make ahead
Ingredients & what they do
Oat milk + apple cider vinegar
This makes a quick dairy-free buttermilk. It helps the muffins rise nicely and keeps them soft inside. It might look a little funny after sitting, that’s perfect.
All-purpose flour
The base that holds everything together while still giving you a tender crumb.
Granulated sugar
Adds clean sweetness and helps the tops get lightly golden.
Brown sugar
Brings moisture and a deeper, cozy sweetness that makes these taste homemade in the best way.
Baking powder
Gives the muffins their lift. Don’t skip or swap, this is the puff factor.
Salt
Just enough to balance the sweetness and make the flavors pop.
Cornstarch
A little trick for softer muffins. It keeps the texture light and delicate.
Melted vegan butter
Adds richness and keeps the crumb moist. Let it cool a bit before mixing so it blends smoothly.
Vanilla extract
Adds that warm bakery smell and flavor we all love.
Fresh blueberries
The star of the show. Fresh berries give you juicy pockets instead of streaky batter.
How to make vegan blueberry muffins
Preheat your oven to 400°F and line your muffin pan with liners or give it a light grease. Future you will be very glad you did.
In a small bowl or measuring cup, stir together the oat milk and apple cider vinegar. Let it sit about 5 minutes so it can thicken slightly, that’s your homemade buttermilk doing its thing.
In a large bowl, whisk together the flour, both sugars, baking powder, salt, and cornstarch. Take a second to break up any brown sugar clumps so your batter stays smooth.
In another bowl, whisk the melted vegan butter and vanilla into the milk mixture until fully blended.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Once the flour disappears, stop mixing. Lumpy batter makes soft muffins, overmixing makes tough ones, and we’re not doing that today.
Fold in the blueberries carefully so they stay whole and don’t streak the batter.
Divide the batter into the muffin cups, filling each about ¾ full (a little more if you like tall tops).
Bake for about 20 minutes, until the tops are lightly golden and a toothpick inserted in the center comes out clean (a little blueberry juice is fine).
Let them cool in the pan for a few minutes, then transfer to a rack to finish setting up.

Simple Vegan Blueberry Muffins
Ingredients
- 1 1/4 cup oat milk
- 1 teaspoon apple cider vinegar
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 tablespoon cornstarch
- 1/3 cup melted vegan butter cooled slightly
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh blueberries
Instructions
- Preheat oven to 400°F. Line a 12-cup muffin pan with liners or lightly grease it so nothing sticks later (because nobody wants to fight a muffin).
- In a measuring cup, stir the oat milk and apple cider vinegar together. Set aside for about 5 minutes. It will thicken slightly, that’s exactly what you want.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, and cornstarch. Break up any brown sugar clumps so the batter stays smooth and even.
- Add the melted vegan butter and vanilla extract to the milk mixture. Whisk until fully combined.
- Pour the wet mixture into the bowl of dry ingredients. Stir gently with a spatula until just combined. Stop as soon as you don’t see dry flour, overmixing makes dense muffins and we’re going for soft and fluffy.
- Add the blueberries and gently fold them in so they’re evenly distributed. Try not to crush them, those juicy pockets are gold.
- Scoop batter into the muffin pan, filling each cup about 3/4 full. A cookie scoop makes this super tidy and quick.
- Bake for 20 minutes, or until the tops are lightly golden and a toothpick inserted in the center comes out clean (a little blueberry juice is fine).
- Let muffins rest in the pan for 5 minutes, then move them to a rack to cool completely. Or at least long enough that you don’t burn your fingers, ask me how I know.
