Levain-Style Vegan S’mores Cookies
I’ve got the perfect recipe for you and the kiddos to make together . These delicious thick vegan s’mores cookies, packed with melted marshmallows, crushed graham crackers, and rich chocolate chips. They’re easy to whip up and bring the nostalgic taste of campfire s’mores to your kitchen.
Ingredients You Will Need
Cold vegan butter
Brown sugar
Granulated cane sugar
2 flax eggs (ground flax + water)
Vanilla Extract
Unbleached all purpose flour
Corn starch
Baking powder
Baking soda
Sea ssalt
Vegan chocolate chips

How To Make S’mores Cookies
Step 1
Prepare your flax eggs and set it to the side.
Step 2
Cream your cold butter and sugars for no less than 4 minutes. Scrape the sides down.
Step 3
Add your vanilla and mix until combined.
Step 4
Add the flax eggs and mix again.
Step 5
In a separate bowl, measure out all of your dry ingredients except for the chocolate chips.
Step 6
Add your dry ingredients into your wet ingredients and mix until just combined. DO NOT OVER MIX.
Step 7
You want your dough to be the consistency of playdoh. If it’s too wet, add a couple tablespoons of flour and mix again. If it’s too dry, add a splash of plant milk.
Step 8
Add in chocolate chips and fold them into the dough.
Step 9
Weigh out your cookie dough into 3oz balls and refrigerate for no less than 30 minutes do not skip this step.
Step 10
While you wait for your dough, preheat the oven to 375°F.
Step 11
I recommend doing a test bake with one cookie to make sure your oven does not run hot.
Step 12
Bake your cookies on a cookie sheet lined with parchment paper for 18-20 minutes, turning once halfway through.
Step 13
Look for a matte finish on the top of your cookies. If they are still shiny on top, they are not done yet.

Let set for 30- 45 minutes to firm up and enjoy!

- In a large bowl, cream the cold vegan butter, brown sugar, and granulated sugar together for about 4 minutes until light and fluffy. Scrape down the sides of the bowl as needed.
- Add the vanilla extract and mix until well combined.
- Add the prepared flax eggs and mix again until incorporated.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cornstarch, and salt.
- Gradually mix the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
- Fold in the chocolate chips, crushed graham crackers, and pieces of marshmallow.
- Weigh out the cookie dough into 3-ounce balls and refrigerate for at least 30 minutes (do not skip this step!).
- Preheat the oven to 375°F (190°C) while the dough is chilling.
- Bake the cookies on a parchment-lined baking sheet for 18-20 minutes, rotating the sheet halfway through for even baking.
- Look for a matte finish on top; if they’re still shiny, they need more time.
