How To Make Funfetti Crinkle Cookies

Step 1

Step 2

Mix in the applesauce, vanilla extract, and almond extract. It should look smooth and a little glossy.

Step 3

Mix together your granulated sugar and powdered sugar in separate bowls.

  • 1/2 cup salted vegan butter room temperature
  • 1 cup granulated sugar
  • 1 4 oz package applesauce
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/4 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/3 cup rainbow sprinkles

Sugar Coating

  • 1/4 cup granulated sugar
  • 1/4 cup powdered sugar

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Beat the vegan butter and granulated sugar together until fluffy and lighter in color.
  • Mix in the applesauce, vanilla extract, and almond extract until smooth.
  • Add the flour and baking powder and mix just until a soft dough forms. Don’t overmix.
  • Fold in the rainbow sprinkles.
  • Place granulated sugar in one bowl and powdered sugar in another.
  • Scoop dough into balls (about 2 tablespoons each).
