Preheat oven to 350°F. Grease or parchment-line a standard loaf pan.
In a small bowl or measuring cup, combine soy milk and apple cider vinegar. Stir and let sit 5 minutes to curdle and thicken slightly.
In a large bowl, whisk together the flour, baking powder, salt, and baking soda until fully blended.
In another bowl, whisk the sugar, yogurt, vanilla extract, and the prepared milk mixture until smooth and fully combined.
Add the wet ingredients to the dry ingredients. Stir gently with a spatula until just combined and no dry pockets remain. Do not overmix.
Fold in ¾ cup of the mini chocolate chips, distributing them evenly through the batter.
Transfer the batter to the prepared loaf pan and smooth the top.
Sprinkle the remaining ¼ cup chocolate chips over the surface and lightly press them into the batter.
Bake for 45–55 minutes, checking at 45. The loaf is done when a toothpick inserted in the center comes out clean or with melted chocolate only.
Cool in the pan for 15 minutes, then remove and cool fully on a rack before slicing for the cleanest cuts.
