Quick mini vegan pizza

Easy homemade vegan mini pizzas made with a simple yeast dough. Bake them right away or freeze for quick lunches and easy dinners throughout the week.

Ingredients

  • 1 packet active dry yeast 2¼ teaspoons
  • 1 cup warm water
  • 1 tablespoon sugar
  • 2½ cups all-purpose flour
  • 2 teaspoons salt
  • 2 tablespoons olive oil
  • Pizza sauce
  • Vegan cheese
  • Toppings of choice

Instructions

  • Combine the warm water, sugar, and yeast in a bowl. Let sit for 10 minutes until foamy.
  • Add the flour, salt, olive oil, and yeast mixture to a stand mixer.
  • Mix until the dough starts to come together and pull away from the sides of the bowl.
  • Knead with the dough hook for 5 minutes.
  • Transfer the dough to parchment paper and let rest for 10 minutes.
  • Divide the dough into 8 equal balls.
  • Press each ball into a small pizza shape using your fingers.
  • Add pizza sauce, vegan cheese, and desired toppings.
  • For freezing, place pizzas on a baking sheet and freeze until solid. Transfer to a freezer bag.
  • For immediate baking, bake at 400°F for 15 minutes or until golden and cooked through.
