How to make the cinnamon rolls
Activate the Yeast
Heat your soy or almond milk until it’s warm (around 110°F or 43°C).
In a small bowl, combine the warm milk and active dry yeast. Stir gently and let it sit for about 5-10 minutes. You should see bubbles forming, which means the yeast is activated and ready to go!
Using a Bread Maker:
In the bread maker, add the activated yeast mixture, vanilla soy yogurt, and melted vegan butter. Then, add the flour and granulated sugar on top.
Select the dough setting on your bread maker, Let the machine do its magic!
Once the dough cycle is complete, remove the dough from the bread maker. Place it in a lightly greased bowl, cover it with plastic wrap or a clean kitchen towel, and let it rise in a warm spot for about 30 minutes or until it doubles in size.
Using a Mixer with a Dough Hook:
In a large mixing bowl, combine the activated yeast mixture, vanilla soy yogurt, and melted vegan butter.
Add the flour and granulated sugar to the bowl and use the dough hook attachment on your mixer to combine everything. Mix on medium speed until the dough comes together and pulls away from the sides of the bowl. If it’s too sticky, you can add a bit more flour.

Prepare the Filling
While the dough is rising, you can prepare the filling. Mix together ground cinnamon, and brown sugar in a small bowl and set aside your butter
Roll and Bake
Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it into a rectangle, about ¼ inch thick.
Spread the butter and sprinkle the cinnamon sugar filling over the dough, leaving a small border around the edges.
Starting from one long edge, carefully roll the dough into a tight log ,Slice the log into equal pieces and place them on a parchment-lined baking sheet. or cut it into strips and then roll and place on a parchment lined baking sheet.
